Family:  Aster (Asteraceae) Annual. 100 to 120 days to harvest Native to the Mediterranean, flowering yellow-orange-red to 4 feet tall.   Safflowers have highly colored yellow-red flowers that make an inexpensive substitute for saffron.  The petals can be successfully infused in oil, producing a deep orange color.  Plant prefers sun to part shade and poor, dryish soils.  Large seeds are best direct-seeded after last frost.  Harvest flowers once they open, or let mature to produce the oil-rich seed.  Space plants 1 to 2 feet apart.
